Cranberry Chicken and Sweet Potato BakeCranberry Chicken and Sweet Potato Bake

4 Servings

100% Pure Mazola Corn or Canola Oil 25 ml

1 can Whole Berry Cranberry Sauce 398ml

4 Bone-in chicken breast halves, skinless (4 oz/125g each)

4 Sweet potatoes, peeled and thinly sliced

Pre-heat oven to 375(F (190(C).

Whisk together oil and cranberry sauce; set aside. Spray a 13 x 9 inch (3 L) casserole dish with Mazola Simplicity Canola No Stick Cooking Spray. Place potatoes evenly on the bottom of casserole dish. Top with chicken; pour cranberry mixture evenly over the chicken and potatoes.

Bake uncovered for 50 minutes or until chicken reaches an internal temperature of 165(F (75(C).
