Mix and Match Stir-FryStir-fry meals are a great way to incorporate all of the important food groups such as vegetables, proteins and grains into one hearty meal. This recipe is a great twist on stir-fry, because it uses family-favourite flavours like ketchup as a savoury sauce which complements any variety of vegetables with your choice of meat, poultry or even seafood. Your family will love it.

Prep Time: 15 minutes, Cook Time: 13 minutes

Serves: 4

Ingredients

1 cup (250 ml) Heinz Tomato Ketchup

1/2 cup (125 ml) Heinz Tomato Juice

2 tbsp (30 ml) soy sauce

2 tsp (10 ml) Lea & Perrins Worcestershire sauce

1 tsp (5 ml) each horseradish and minced fresh ginger

2 tbsp (30 ml) vegetable oil

1 onion, sliced

1 lb (500 g) chicken, pork or beef strips or shelled shrimp

4 cups (1 L) mixed chopped vegetables such as broccoli, asparagus, bok choy, sweet peppers or snow peas

Lemon or lime wedges (optional)

Preparation

To make the chilli mixture, stir ketchup with tomato juice, soy sauce, Worcestershire sauce, horseradish and minced ginger. Reserve.

Heat the oil in a deep skillet or wok set over medium-high heat. Add onion and stir-fry for 3 minutes. Add meat or shrimp and continue to stir-fry for 3 minutes. Add vegetables and stir-fry 2 minutes longer.

Make a well in the centre of the pan and pour in reserved chilli mixture. Bring to a boil. Reduce heat and simmer for 3 to 5 minutes or until meat is cooked through and sauce is thickened. Garnish with lemon (if using). Makes 4 servings.

Twists

Twist 1: For a complete Asian-style supper, serve with cooked rice or noodles.

Twist 2: For a tangier version use Heinz Chilli Sauce instead of ketchup.

Twist 3: For a spicier version, use Heinz Hot & Spicy Tomato Ketchup instead of regular ketchup or add hot pepper sauce to taste.
