Christmas Fruit Mince Pies are a traditional favourite. Keep a batch of these delicious little pies on hand for when guests drop by.

Christmas Fruit Mince Pies

Lightly flour a board and roll out pastry to 3mm thick. Using a 7mm round cutter cut out rounds to line 16 patty tins. Use a 6mm cutter and cut the tops from the remaining pastry. Spoon teaspoons of the mincemeat into the base of the pies. Brush the edges of the pies with beaten egg and place the tops over the filling. Press the edges to seal.

Glaze the pies with the remaining beaten egg and bake at 180°C for about 15 minutes or until lightly browned.

To serve heat at 140°C for 15 minutes or until warm.

Dust pies with sifted icing sugar while still warm and serve.
