You can buy packaged fruit mince but it is easy to make at home for use as a filling in Christmas fruit mince pies or making a quick fruit mince steamed pudding by sifting 1/4 teaspoon mixed spice with 1 1/4 cups (155g) flour into a bowl. Add a pinch of salt, 120g softened butter, 2/3 cup (160g) sugar and 3 eggs and beat together well. Stir in 1/3 cup (60g) fruit mince into the pudding mixture. Pour into a greased 1 litre pudding basin. Cover basin with paper tied with a string. Put onto a trivet or upturned saucer in large pan with enough boiling water to come half way up the sides of the basin. Cover with a tight fitting lid and cook for 1 hour 45 minute checking the water level every so often and topping up if necessary. Christmas Fruit Mince Makes about 2 cups Ingredients
Method Finely chop the apple and half the sultanas. Combine in bowl with the remaining sultanas and ingredients and mix well. Transfer to sterilised jar and store in fridge for at least 3 days before using.
